That's my bad - I even made a note to go for the 7800X3D after checking out the LTT review of it but it went straight out of my head but that's swapped out now. That also drops my power consumption by 30W so I'll drop the PSU to 750W as well, as I have 150W+ spare.

I originally said last month that I was planning to get my new rig in September, well Larian studios brought Baldur's Gate 3 forward by 2 weeks & I was able to get a cracking deal...
I had the majority of the money saved up and would have the rest for September, if not for the insurance claim. Still planning on waiting till September but I can't really justify going full 4K for £3000 now when the money is needed for other things now.
Dropping down to QHD seems like a decent...
Had a look around and in the current climate, I'm probably going to go 2K instead of 4K, can't really justify the added £500+ after just having to pay out £250 excess on an insurance claim...
So I've rejiggled the spec down to £2000 and I'll be able to pair that with a great QHD 34" ultrawide...
Thanks for the input - I was probably going to go £2800 all in, so hopefully the prices for the rig can drop enough for a reasonable 4K monitor. Either that or I re-spec the whole thing down to 1440p and use the savings to get a great monitor to match that level.
