I've only ever bought gaming laptops from PCS, never a desktop, so apologies if this is a stupid question. If I buy a desktop, will I get all the packaging from the fitted parts (graphics card box, CPU box, motherboard box etc) to add to the the resale value when I come to upgrade later on?

According to this post by Sager (the biggest Clevo reseller in the world) they have sucessfully upgraded the P150HM to 7970M and are offering upgrade kits. Upgrading the 17.3" version (P170HM) is slightly more complicated, as outlined in their post.
