It sounds like if you want more than six cores you should get the 5900X but the best reason for getting the 5900X over the 5600X is if you need it for production stuff.

5600X looks to be a great gaming CPU.

Going from benchmarks if you just want it for gaming, 5600X seems to be the better option than 5900X. £200 less for basically the same performance.
