This morning when I took my GPU out, I noticed the PCIe connectors wereplugged into one of the +12v1 slots on the PSU

Whats the difference between the +12v1 and the +12v2 if any? :)

There's no difference, each +12V is a rail dedicated to supplying a proportion of the PSU's amperage. Corsair PSU's have less rails than FSP, they are usually single rail, where as our FSP PSU's have 4 x 12V rails, each supplying 18A - 30A, depending on the model.
