Silver warranty,a PSU that supports SLI. If you are in a budget I would suggest going for a 750w PSU and a caviar black as the secondary drive rather than overclocking the CPU.

Thanks for the advice dudes... Think I am going to stick with an OC'd CPU as it's something that I want to have done, but I just don't feel comfortable doing it myself.

Latest below... thoughts? Yes, I have gone even more over budget - but only £60 over my previous over budget :/ (I need to be careful lol)

If you can, opt for a modular psu, you will be glad you did. If not due to tight budget then stick to the current spec.

A modular psu will free up space in your case from all the unused cables. In return, will provide smoother and better airflow in your case for cooling.

I couldn't justify the modular PSU unfortunately but will definitely add to my build once I have some more disposable funds so thank you for the tip.

Although I'm not an expert I think I'm right in saying the the h40 hydro cooler is garbage, you may want to look into this.

It's not garbage but the intake fan is noisy since it only runs at one speed 1900rpm. I upgraded the fan myself to one that is now silent, it is worth considering getting another cooler if you don't want constant fan noise or to replace parts yourself. As for its cooling performance mine has been great so far.
