Questions.

1. The processor i have chosen is £100 more than another that is only 0.3GHZ less than the current one i have chosen however it can overclock slightly more with turbo boost. Will it make much of an impact in video editing if i take the cheaper processor?

2. The duel 7970's Been a BIG problem with these cards and its changing all the time with new drivers? Defiantly going to go for the cards but what drivers would anyone recommend?

3. Is the spec okay or is there any more i could budget to get a better price for my buck because i can spend that much its just i'd rather see if i can get good value for cheaper?

I know it's been a long post and any comments would be much appreciated! :D

For Maya, Photoshop, Mudbox and video editing, go for the fastest processor with the most cores and the most RAM that you can afford. You should see a marked improvement by increasing the amount of RAM, in particular. The fewer times that Photoshop/Maya have to swap things with the SWAP, the faster you'll get things done.

I've heard good things about SSDs and Photoshop. The bigger the better, obviously.

Must you have two graphics cards? A single, beefy graphics card will make your life easier. I don't dabble in Photoshop (well, the GIMP) much, but I know that there's a CUDA (nVidia) plugin for Photoshop which might speed things up for you. I don't know whether there's a similar thing for AMD's programmable cores. SLI and Crossfire performance also doesn't scale the same as the cost to your wallet does. If you are truly defiant in getting these then I can't helpfully discuss drivers; I don't have this card.

I have a Bigfoot Killer NIC, too, and I can't honestly say that there's a difference.

Finally, I'd say get rid of all of that trial software. Unless you're going to buy them when your trial periods expire, they're just going to clutter up the disk and give you more work to do when you uninstall them in order to install the programs to replace them.
