I know PSU is over kill but thats there for when I can afford to SLI

Currently, no. the spec looks good. Im guessing that the spec is aimed for just gaming with general use? I just don't really see much beneficial overclocking the pc just for gaming? The pc alone without overclock will certainly serve you well without the overclock, but if wished to be kept then there isn't much harm apart from the drain in the cpu's lifespan which im sure you're aware of?

Other than that, if you don't plan to write on blu ray then i would go for the normal blu ray rom drive as it has everything apart from writing on discs so that could save yourself since writing on blu ray don't come cheap.

You could split the hdd drive to get a nicer balance to the spec. go for a 500/750gb cavair black drive for your progs or softwares etc while the rest like your media and files on a second 1TB drive which is used as storage :)

Everything Teaz said, you wont need OC'd machine for gaming so scrape all that, you'll want the £19 wireless card if your going to be SLIing it at a later date make sure you get the £19 not the £16 version (different connection to motherboard, better for SLI)
If you decide your not OCing then you wont need the sabertooth MoBo go for the P8Z68 Pro, much better, you wont need the 1600Mhz ram go for 1300Mhz, you wont need A.L.C, go for the £19 or Fenrir. If your just gaming drop to the i5 you wont need hyperthreading, you can still OC the standard i5 if you want just not as much as the "k" version, so you really wont notice much difference (imho) tbh

Thx for the comments.

I am hoping to do some photo and video editing work on this also at some point and will be working with HD video and Raw files for the phptography, and chances are before the cpu POP's I'll be ready to upgrade again. I hear I should get a good 5-8 years out of an OC'd processor (fingers Crossed).

True, its apparently down to the voltages and heat within your machine so as long as you've got a decent case and fans/cooling OCing shouldn't effect your rigs life-span, especially if your not going to be pushing it 24/7
