Ridiculous over-spec of a laptop

As someone who travels the world for work, a nice desktop doesn't cut it for me. Also as someone who likes to game the most recent stuff at top settings, I need something that's going to cover the PS4 generation of ports which come over to the PC (and PC built titles, but most are likely to come over from console-land at the moment.

The below I hope to last me 4-5 years without any performance issues. I'm not planning to hook up to 4K. Is there anything i've missed below that could be tweaked to be a little better?

That looks fine. My only change would be the second drive as you would get better performance from a WD 7200rpm fast drive but are then limited to a maximum of 750GB. I guess if you are travelling a lot, the 2TB on board is a better option than carrying external spare/back-up drives.

Not been on the Laptop specs page for some time but if your throwing money at it you could overcome the low storage/fast drive issue by moving the SSD to the M.2 slot and having a better 1st drive.
Also, if you travel a lot might be worth getting a second battery, can have it charged so for those moments your not within mains reach and the battery goes you can put the spare in and carry on!

1TB Samsung 850 EVO SSD, SATA 6Gb/s (upto 540MB/sR | 520MB/sW)

mSATA/M.2 SSD Drive 500GB Crucial MX200 M.2 2280 SSD (upto 555MB/sR | 500MB/sW)

£200 more expensive, but I guess I could do something like this and leave HDDs behind altogether.

You will find that a combination of the 500GB m2 and two WD 750GB 7200rpm HDDs is cheaper and will give much more storage.

^^ That's what I meant sorry, move the SSD to the M.2 and use mechanical in 1st slot, might be able to get a 7200rpm drive in there then with decent storage and not be limited like you would be with 2nd drive slot.

I guessed that was what you meant but I have a habit of thinking one thing and typing another and thought it may be contagious :)

The problem is i'm limited to a 750GB 7200 rpm with the mechanical drive, any higher is 5400 rpm.

I could go for a 1TB SSHD but I have no idea about those :D

Stay away from the hybrids, you would not benefit from the very small ssd part of it and it would be slower than a WD. Not sure what you mean by being limited to a 750GB 7200rpm, the Octane chassis will take two of those and a m2 drive as well, so you would have 500GB SSD and 1.5TB of HDD.
