Slow PC when opening PS and AI

Hey guys, this is a brand new PC about a month/half old. At the time of order I thought it was an overkill for using photoshop and Illustrator as I primarily use them for graphic design. However the PC goes mad slow/Laggy when I open them both. Photoshop also loves to crash when it gets slow. The files that I work with are between 20-200mb and I don't open multiple files either.
When I quickly check the task manager the CPU usage would be 64% for example and suddenly drops down to a lower number like 35% as if the machine pretends to go down in value when I'm observing.
I'll attach a grab below of the CPU usage % and I haven't opened a single file yet so you can imagine how it would be like when I start working.
Also pasted the full specs of the PC - Perhaps I am wrong to think this PC was an overkill, please help me with this, are the specs good enough?
I am also looking to run blender soon so that would be problematic aswell I guess.

Before I bought this I had a 2019 Macbook pro base model and it never had such problems apart from loud fan noises. Thank you in advance.

I'm afraid it's really badly designed and the components aren't suitable.

The system will be creaking generally, it's just never going to work very well.

The processor will be thermal throttling constantly due to an insufficient cooler and motherboard, and there are other issues as well.

It's just not going to work very well I'm afraid.

You can check thermals to be sure, but I'm 99% certain that's the issue.

It was my first time ordering a pc having the option to select the parts so you could say I am a noob. I only focused on getting as much RAM possible, good graphics card and processor  how are they incompatible? I would be happy to hear your choice of components please

Thank you Sir for all of that.

If you don't mind may I ask what is the benefit of getting a more expensive case and a motherboard? Is it to do with more room for extra fans?
I think I understood why a better processor cooler is needed. In my case, the reason why the PC is slow, could it be because of overheating and a lower standard graphics card than the one you selected?
If windows defender is enough why are other antivirus softwares made available?

The case determines the airflow within, a poor case will have poor airflow which leads to thermal throttling and instability.

Motherboard determines the power flow on the motherboard, the higher up the processor, the higher voltage it requires, lesser boards are not able to control the voltage to the requirements and this leads to instability and thermal throttling.
In my case, the reason why the PC is slow, could it be because of overheating and a lower standard graphics card than the one you selected?
It's poor power delivery, and overheating as well as slow RAM and SSD. The GPU will be fine, although it wouldn't have been recommended as is an old card and more expensive than a current 3070 for far less performance.
If windows defender is enough why are other antivirus softwares made available?
Consumer choice? Odd question. People want choice. But those who understand windows know that windows defender is better than any paid option and has been the number one for protection for 2 years running.

Windows is nothing like Mac, Mac is very tied down and restrictive, a lot is dictated to you. Windows is completely open with far more developer support and hardware options. But as a result, you have to know what you're doing more on windows, or at least seek more advice.

The case is one of the most important parts of a system and it’s one that gets overlooked time and time again. You’re paying thousands of pounds for a PC, it doesn’t make sense to put it in a budget box. It doesn’t have to be expensive, you just want to get a case with good airflow in order to let cool air wash over your components and help keep the system running optimally. Motherboards also play a huge part in letting a CPU reach its potential, they have heat sinks in which will help dissipate the warmth that is emitted from the processor and higher models have more capacity to help regulate the voltage.

EDIT - @SpyderTracks beats me to it 😆

Thank you both Sir for your expert feedbacks. I hope I can send the PC back for an upgrade or a refund.

The BSOD Doctor
I've had that suggestion many times, not sure why PCspecialists installs it in the first place, what would be a less interfering antivirus software?
thanks
Money. They have a financial deal with Bullguard to install the trial would be my guess. At least PCS give you the option to not have it.
