Is it possible to find out which exact type of gpu would the guys use in a build?
I'd like to go for RX 5700 XT, but I can't see which model they would use.

You'd need to call them to find out which model they're currently using.

It's generally advised to avoid AMD GPU's as they've had ongoing driver issues for almost a year now resulting in BSODs and stuttering.
