Personally, I would go with this:

Case
COOLERMASTER HAF 922 MID TOWER GAMING CASE
Processor (CPU)
Intel® Core™i7-2600 Quad Core - as your gaming OCing isn't needed, and so you should get the 2600.
Motherboard
ASUS® MAXIMUS IV EXTREME (NEW REV 3.0) - better than the Sabertooth by far
Memory (RAM)
8GB KINGSTON HYPER-X GENESIS DUAL-DDR3 1600MHz - I'm one of the few people on the forums that would recommend getting the Kingston.
Graphics Card
1.5GB NVIDIA GEFORCE GTX 580 - 3GB won't give you any performance boost unless playing on massive res.
Memory - 1st Hard Disk
750GB WD CAVIAR BLACK WD7502AAEX, SATA 6 Gb/s, 64MB CACHE (7200rpm)
1st DVD/BLU-RAY Drive
24x DUAL LAYER DVD WRITER ±R/±RW/RAM
Memory Card Reader
INTERNAL 52 IN 1 CARD READER (XD, MS, CF, SD, etc) + 1 x USB 2.0 PORT
Power Supply
CORSAIR 1000W PRO SERIES (HX1000) - enough for future SLI
Processor Cooling
SUPER QUIET 22dBA TRIPLE COPPER HEATPIPE CPU COOLER (£19)
Operating System
NO OPERATING SYSTEM REQUIRED
Warranty
3 Year Gold Warranty (2 Year Collect & Return, 2 Year Parts, 3 Year Labour) (£69)

Price: £1,463.00 including VAT and delivery.

my computer knowledge isn't amazing, so could you tell me how the ASUS® MAXIMUS IV EXTREME (NEW REV 3.0) is better? :) I want to understand every choice :)

I only chose it because in your i7-960 build you went for a triple SLI motherboard, so I thought I'd do the same lol xD it basically has support for 3 graphics cards while the sabertooth only has support for 2. However, if you won't be getting multiple GPU's i'd suggest sticking with either the P8P67/Z68 boards :)

I had an incline it was something to do with SLI, tbh i think i'd may use the 2way SLI in the future but not 3way SLI. Should be ordering soon so wanting to make things clear :)
