I believe there is an option it the BIOS to completely power off the Nvidia GPU so it runs off the Vega 8 iGPU. Can you confirm this? I believe it's under Advanced > Display Settings (something like that).

Just a stab in the dark here (wild guess), but perhaps add acpi_osi="!Windows 2015" to your boot params? So in your /etc/default/grub, you'd have something like this:
GRUB_CMDLINE_LINUX_DEFAULT="quiet splash acpi_osi=\"!Windows 2015\""
Then run:
sudo update-grub
Then reboot.

I'm pretty sure they used to - when I bought my Defiance II, I'm pretty sure there was a 2560x1440 option.
It's a shame, personally I think 2560x1440 is the sweet spot on a 15.6 inch panel.
