Hi @MadJack. This looks like an amazing machine. What's it for? Depending on what you're going to do with it, there are a couple of changes I'd suggest (mainly the cooler, but I'm also curious about the very cheap monitor...)

What's your budget, out of curiosity? (I'm guessing "relatively unlimited".)

Generally gaming and streaming! However the smaller monitor is just for watching videos etc whereas the 2k monitor is for everything else. This cost about 4k!

So I'm not sure you're making the best use of your money here. Frankly, you're probably underspending on the monitor, and overspending on some other components.

I'd go for this build:

Case
CORSAIR iCUE 465X RGB GAMING CASE
Processor (CPU)
AMD Ryzen 9 5900X 12 Core CPU (3.7GHz-4.8GHz/70MB CACHE/AM4) - there's no real benefit to the 5950X for gaming - the 5900X is a super choice
Motherboard

GIGABYTE X570S AORUS ELITE AX : ATX (USB 3.2 Gen 1, PCIe 4.0, CrossFireX) - ARGB Ready!) - unless you see a need for Thunderbolt in your future, I'd choose this board as the other's designed more for professional work
Memory (RAM)

32GB Corsair VENGEANCE DDR4 3600MHz (2 x 16GB)
Graphics Card
12GB NVIDIA GEFORCE RTX 3080 Ti - HDMI, DP, LHR
1st Storage Drive

2TB SEAGATE BARRACUDA SATA-III 3.5" HDD, 6GB/s, 7200RPM, 256MB CACHE
1st M.2 SSD Drive
500GB SEAGATE FIRECUDA 530 GEN 4 PCIe NVMe (up to 7000MB/R, 3000MB/W)) - ultrafast boot drive
1st M.2 SSD Drive

2TB INTEL® 670p M.2 NVMe PCIe SSD (up to 3500MB/sR | 2700MB/sW)) - fast secondary drive for games
Power Supply

CORSAIR 1000W RMx SERIES™ MODULAR 80 PLUS GOLD, ULTRA QUIET) - gives plenty of headroom for upgrades
Power Cable

1 x 1 Metre UK Power Cable (Kettle Lead)
Processor Cooling
CORSAIR iCUE H100i ELITE LCD Display RGB CPU Cooler) - really good and pretty cooler (it has a screen to tell you your CPU temps...)
Thermal Paste

STANDARD THERMAL PASTE FOR SUFFICIENT COOLING
Sound Card
ONBOARD 6 CHANNEL (5.1) HIGH DEF AUDIO (AS STANDARD)
Network Card
10/100/1000 GIGABIT LAN PORT
USB/Thunderbolt Options
MIN. 2 x USB 3.0 & 2 x USB 2.0 PORTS @ BACK PANEL + MIN. 2 FRONT PORTS

Then I'd look at getting monitor(s) somewhere else. This system can realistically drive a 4K 144Hz monitor, so in your shoes I'd be looking at one of those. A 1440p monitor would really be a bit wasted on it. The best option right now is the Gigabyte M32U:

This brings you right to the top of your budget, and there are definitely possible savings you could make, but it would be an absolutely amazing system. I haven't included a second monitor, quite frankly because that one looks terrible, but perhaps it would be all you need...

For the monitors I can upgrade at any time, but that reached out of my price range at the time and with the motherboard I was thinking I’d need Wi-Fi enabled because my room isn’t the same room as the router, this would probably need a technician in they come in Wednesday but they might not be able to move it. That’s the conundrum I have.

Well, here's another option with a couple of hundred lopped off the price with downgrades to motherboard, cooler (losing the LCD screen) and the secondary SSD. You could even go down to the 3080 and still get excellent performance on a 4K display. The 3080 Ti is the "have the absolute best" graphics card: it's not even remotely "value for money".

Spending £320 on a display in a £4000 build is sadly the way to get poor value for money as you won't be able to make the most of the graphics card with a 1440p display.

Also with the ICUE processor cooling you recommended, I wouldn't need the extra fans then because of the processor cooling comes with additional fans, so the set up says am I correct?

Yeah, two RGB exhaust fans on the cooler, so you neither need nor have room for the three extras.

150i wont fit in a 465x case without removing hard drive enclosure & the 100i will cope fine in that case with 5900x
