Looking at the build below for mainly gaming up to 4K with some video and photo editing.

Looking at maybe a Gigabyte M28U monitor.

Any particular issues?

Configurator priced the above at £2500 which is my budget. Getting monitor separately.
Monitor I am looking at getting separately is Gigabyte M28U IPS Gaming 4K 144HZ. HDMI 2.1, DP 1.4. This seems a decent budget entry option for now so hopefully the PC will work OK with that for the stated usage.

Here's what I'd change about your build. Be aware that the 7900XT is a high-end 1440p GPU; don't expect very high frame rates in 4K.

Other improvements include a better/newer motherboard, a smaller OS drive, a 1200W RMx SHIFT PSU (750W is insufficient to power the system), and a newer LINK 280mm AIO.

Many thanks for your time on this, much appreciated. I will take it on board. Re the motherboard, do you recommend it for future proofing reasons/upgrade purposes? Do the B650s not have what I need right now? Is it that they are getting out of date?

B650 chipsets are from the previous generation; they are still adequate, but for such a high-end build, I would prefer a PCIe 5.0, WiFi 7, USB4 motherboard. The Aorus Elite is the best value option on PCS for a premium X870E chipset (just £12 more than the lower-tier TUF X870).

Thanks. I have taken your advice on the mobo and cooler and storage.

What's your rationale with the GPUs if you don't mind? I was going for the merc originally. I suppose it would be nice to have gigabyte board monitor and gpu, and gigabyte is sleeker and has rgb, but aren't the performances and prices very similar?

Yes, you can choose anyone; there is almost no difference in performance. It merely changes the customisation. Gigabyte is a few pounds cheaper.
