Help on gaming PC specs.

I was looking into gaming PCs because I have to play on PS4 with keyboard and mouse, I have configured an AMD CPU. I am on a budget of £1,250 and I was wondering if I’d be able to play games such as Fortnite GTAV Minecraft and COD Warzone I mostly play fortnite but quite a lot on the other games and I also want to be able to stream at 1080p60 and edit on this PC, I want a high graphics card because I might want to stream off of that. I am not great with AMD so I don’t know weather the CPU is good or not. Could you please tell me if this is a good computer, and if you would change anything because the budget.

Seems very good. The case I might change as it's not got the best airflow. The Corsair 275 is a £1 cheaper and it's designed for Airflow.
I might get slightly higher frequency RAM as 2400Mhz is behind the curve at the moment, something like 3000mhz and up is pretty much standard now and is most suitable for Zen2 CPU's. Other than that, all seems very good.

Good allrounder gaming PC with the option to stream at Full HD.

The streaming side of things on a PC is going to be handled by the CPU, even if your are streaming and gaming at the same time.

GPU choice is really down to what monitor you are using...the 2060S is a 1440p GPU so not really necessary if you have a 1080p monitor and the price difference would be better spend elsewhere SO, let us know which monitor you have (resolution and refresh rate or make and model if unsure) and we can sort out your spec

I have a 1080p monitor so what graphics card would you suggest. And also if I upgraded to a better monitor in a couple years would it still be able to do the job for a 1440p monitor? And if this has anything to do with it I also have a 720p monitor that I want to use as a secondary monitor.

Something like this would be fine for 1080p gaming and would give the capacity for streaming. Also means if you wanted to go up to 1440p, you would just need to swap in the appropriate GPU (currently the 2060 Super for 1440p 75Hz, the 2070 Super for 144Hz...however, there are more powerful GPUs on the horizon), add a 1440p monitor and you are good to go:
