It’s the wrong platform.

the PSU is far too small.

theres absolutely zero upgradeability which is completely pointless

Very slow RAM which will slow the system down

CPU cooler is awful

you may get one game on 120gb

I've emailed them. The compatibility popup never showed when I went to place the order. If the build is bad then won't I receive feedback from them after stress tests?

The compatibility checker just tells you if the components will work together. It won't tell you if they'll work well together. The same goes for testing; that's to verify that the system doesn't have any faults.

Is there ANY way I can save this build through amendments? I went for more storage space, a 550 psu, I went for the 80 PCS CPU cooler, I changed the 1660 ti to 2060. Or should I just cancel and get a refund?

It would be best to cancel if they haven't started working on it and you can get 100% refund.

When did you place the order and what is it's current stage?

If you are able to get it cancelled, let us know what monitor you will be paring the PC with. Model number or resolution and refresh rate?
Budget, what is your max spend?
With these someone will be able to suggest an optimal build allowing you to get the most out of your money and the PC

Monitor is a dell 1280x1024 1080p 75hz. Budget is £1000. Ideally I want best single thread performance (for GW2) so I went with the intel cpu.

I play wow myself so know about unoptimised games preferring less cores.
Honestly though, from all the advice on here you want to avoid Intel currently. Theres only some very specific circumstances (competitive fps games @1080p 240hz)

If Spyder recommends cancelling, its probably very good advice but ultimately it's your decision what you do.

I just generally need a new pc, since my current one I bought 6 years ago is an AMD A8-5500 6GB ram with Geforce 710. If it will run well (after amendments) and last me then I'm fine with it.

You kept your current one 6 years. Probably going to want to keep this one about the same, better to do it right first time and have the possibility to upgrade parts in the future.

Games are only going to keep getting more demanding, with each release/patch/expansion.
You might want a new monitor or even a second monitor. You don't want to be regretting your decision 2/3 years down the line and having to spend unessacary money again

I'm out of my depth here, so I'm just trying to understand why it wouldn't run well. I ran the build through pc part picker and the only objection was that it would need a BIOS update, nothing else.

Also, I need the intel CPU for GW2, would I be sacrificing too much performance with intel to justify cancelling it?

Can't say it any other way, it's a really poor platform which makes whatever you do to it not worth it.
