For editing, you'd really want a higher processor, the 3700x at the least really. Not to say the 3600 will be bad, just the 3700x would be significantly better.

Do you need the pro license? Are you joining your work domain?

I’m 99% sure more cores= faster editing. 8 cores looks better than 6 and if you can afford it 12 is even better... @SpyderTracks ?

Skimping on the GPU would help would it not? Can’t imagine the extra RTX juice in a 2070 is that Important?

It’s a tough call, for me I probably would balance it more and raise the cpu to the 3700x and lower the gpu to the 2060.

Yeah dlss 2.0 is proving to be pretty damn powerful. Only real advantage over the 1660ti

Or if its a desktop cpu with a socket, maybe go with the higher gpu (as that can't be replaced) with the aim of upgrading to a quicker/better cpu in 6 months or so. Worth making sure the psu and vrm's will handle the upgraded cpu, and might be worth asking if the bios is likely to support the xt procs due shortly?
