Last minute (or month/year) changes

Hi all,
On a 40 workday pre-production wait, and finally managed to create an account on the forum. So thought I would ask for any recommended changes for this build before it goes into build in the coming months/years? Who knows in these crazy times?

I got a Gigabyte G32QC 1440 QHD, 165 hz monitor with AMD Freesync Premium Pro.
So this PC will be a gaming PC used for gaming on 1440 at high settings.
Would like to dip my toes into VR in a near future, but for the most part it should be able to run never titles like RDR2 and Horizon Zero Dawn smoothly and run AAA titles for the next couple of years. Other than that, I'm playing a lot of Paradox titles like EU4, Stellaris and Crusader Kings, as well as RPG titles like Pillars of Eternity 2, Witcher 3 etc.
Got a laptop for other work (and gaming so far). So will not store a lot of documents, pictures and other stuff on it - purely for gaming.
Did go for the Radeon RX 6800 (non-XT) 'cause I thought it would be less popular than the Nvidia and the XT GPUs and therefore easier to get my hands on. That was 2 months ago, I'm open for changes now.
Budget around 2000£.

My build goes like this:

It's unlikely you'd need 32GB of RAM for a pure gaming system, unless you're heavily into simulation titles. The 3070 would be a real top-end 1440p experience and gets the benefits of DLSS and better ray-tracing. Two high speed M.2 drives will ensure a rapid boot for your system and a good amount of fast games storage. The Hyper 212 is a good fan cooler but the MasterLiquid would likely shave a few extra degrees off and keep your CPU at optimum boost levels. The 850w PSU is for a bit of future-proofing, if you upgrade your graphics card in a couple of years having the extra wattage is a nice little safety net.

Thanks a lot for the feedback.

Been looking at the 3070 - right now for the higher price I'm a bit reluctant. Hoping AMD will come up with a decent DLSS-competitor in the coming quarter. But does the 3070 seem easier to get your hands on then the 6800?
Will change the drives so both are running on the M.2. The plan was to keep one of the two ports free for future upgrades, but might as well just take advantage of both from day one. So thanks for the heads-up.
I had my eyes set on the Strix B550 since I found it to be a really nice board. But besides from the sound (which I only see as minor improvement - I might go with a DAC anyway) and the ability to clock your RAM higher, is there then any real different between the two? Otherwise I'll change to the TUF-board.
The CPU cooler was a big head-ace. Had the improved Corsair H100x to start with - then changed it to stock after reading that it might be overkill because the 5600X didn't really needed a big cooler since it was running on low power and that there was no real improvement in overclocking it. Ended up with the CoolerMaster Hyper 212 for the middle-ground. If I'm going for the more quieter build, should I then change to the MasterLiquid Lite 240 or keep the Hyper 212? And is there performance advantage with the Lite 240 over the Hyper 212?
