1/. Remove the drive cage tomorrow after some rest, find the cables aren't fully inserted correctly, after plugging back in rig works.... woo hoo, break out the bubbly! (Fingers crossed this is the issue)

This seems very much to’ve worked (albeit without such extensive effort), so I will try to find some bubbly to break out and raise a glass to you all!

Have borrowed an old HDMI HD resolution 27“ monitor before anything more powerful turns up, and the beeps still sound with it turned on. So I assume it’s just an archaic, obsolete, vga alert. Star Wars Squadrons seems to play rather nicely on it, so I’m calling this a success.

When you get a new monitor, connect it with Display port which is far better anyway and the beeps on boot will stop.
