Ordered My First PC

That's something that I'm yet to buy, was looking at around the £400-450 mark
So really you're looking at 1440p-144hrz. So would defiantly recommend the 3060ti over the 2060

You can get a Samsung G5 for £300ish at the moment which is a fantastic monitor and the money saved there will cover the cost difference of the 3060ti :)

(For a 1080p monitor the 2060 is more than fine)

I'm moving from console to PC and want to know if I'll be able to wirelessly connect my xbox remote to my PC? If the PC doesn't come with bluetooth automatically is this something I can add/amend?

No they don't come with bluetooth, but its easy to sort, either get an AX200 Wi-Fi card (its dual band wi-fi and has bluetooth, or get a bluetooth usb dongle

5800x is available off the shelf everywhere atm. 3060ti is not as sorted at 3070, but there are definitely a lot of them produced and in the supply chain. Only the 5900X and 3080 are still in major issues with supply.
