I'm willing to spend between about £2-3k I'll be using it for gaming and streaming and I currently have 2 144hz 1080p monitors but I am planning on replacing the main one with a 144hz 1440p monitor.

I'd change... almost everything here (except the power supply!). Most importantly, steer clear of the X299 platform: it's both old and terrible. You want Intel's 12th generation, which is the best option on the market right now.

For monitors, do you have anything particular in mind? There are various decent shouts in the £300-450 range: the Gigabyte M27Q, the MSI Optix MAG274QRF-QD (my recommended choice: it's currently expensive, but prices seem to be going up and down), the Dell S2721DGFA, maybe the ASUS TUF Gaming VG27AQL1A...

Thanks for the information! I haven't really decided on which monitor to get yet but I'll definitely look into your options. Do you think it's worth bumping up the 3070 to a TI or is it not worth the price increase?

No, the 3070 Ti is an insignifcant upgrade over the 3070. I would not spend significantly more money on it.
