I listened to an ace podcast on fungi the other day. A scientist who works in the field (pun unavoidable) bought a packet of dried porcini mushrooms in a London supermarket and DNA tested 15 pieces. He found 3 species unknown to science. Given the effect some dried mushrooms can have, I'd advise caution with the dosing!Love mushrooms and use them in a load of dishes.
Porcini Mushrooms are fantastic. The dried ones give you a great stock to work with after they have been soaked. Just remember the muslin to strain it, grit is not so nice in a risotto.
Hmmmm, our good friend @Stephen M has recently mentioned that it might be nice to have a food and drink area of the forum, do you think overlord @moosEh might be willing to create a sub-forum? I’ve only experienced true Chinese cooking once and absolutely loved it, cooked by a friends Chinese wife, and my god could she cook!I had a fantastic introduction to real Chinese food many years ago. My uncle was an engineer in the Merchant Navy and he came back with his new wife. Had an amazing meal cooked by my aunt Ying.

Unfortunately they, like many others, are having delivery problems but they have a load of great food.
Definitely recommend the Käsekrainer, one of my favourite Wurst.
