Just to once more confirm that my Nova (Clevo manufacturer) doesn't have the keyboard peeling issue after 9 months, even though it's also a paint coated keyboard. Maybe Clevo is using a better quality paint or something.
Only thing that seems a bit off is just the GPU temperature, so maybe the laptop is not getting enough air through the bottom? Like putting it on a stand or cooling pad might help with that. My comments are based on the other Recoil benchmarks with the same specs, but not sure if the others did...

The first thing I would do is try to find processes that could be using lots of CPU or GPU, you can see that on the windows task manager, under the processes tab. Sort by the CPU or GPU field to see the culprit and, in general, you shouldn't have the sum of all processes taking more than 5-8% of...
My brother just got a 5600X and he's on the stock cooler for now... CPU is going to the high-80s with brief spikes to the 90s when gaming, but room temperature should be around 26-29. He'll try undervolting, but it looks like only a good cooler will solve his issue.
General advice:
Quiet/office mode = for general light/medium load, like Chrome, youtube, email, usual excel, etc.
Entertainment/Gaming = For gaming or heavier workloads that would take longer periods (like those video rendering that takes hours to render, or Photoshop/CAD that you're constantly...
Are you really using performance mode to watch YouTube? If you're doing that, I'm not surprised by your temperatures. When you're not gaming, you're supposed to change it back to quiet mode because your CPU is more than capable of doing any medium/light task even when underclocked.
